Mackerel Stuffed Eggs
- 2 smoked mackerel fillets
- 1 clove garlic
- 5 tbsp cream cheese
- 1 tbsp balsamic vinegar
- 5-6 sun dried tomatoes
- pinch of salt
- pinch of pepper
- bunch of fresh parsley
- 4 eggs
These eggs are known under many names: deviled eggs, stuffed eggs, Polish stuffed eggs, Russian eggs, dressed eggs and so on.
In this recipe however we are going to use smoked mackerel fish and yolk ti stuff our eggs. Let’s get to it. Quick and nutritious meal that is.
- Peel of the skin from the smoked mackerel fillets. Add all the ingredients into a blender and mix into smooth paste
- Hard boil 4 eggs. Peel them, cut in halves and remove the yolks. Mix them with the mackerel paste (deviled eggs stuffing). Fill in the eggs with the paste. That’s it. Enjoy. You may sprinkle it with something green (chopped chives or flat parsley). Salt and pepper to taste.
Tip: You can use any fresh herbs. So far I used basil, parsley, chives and all worked well with this savoury dish. Have to admit liked the option with basil and parsley. Works well with sun dried tomatoes.
