Sardine Butter Ingredients
- 250g unsalted butter
- 4 egg yolks
- 4 tbl spoons of olive oil
- lemon juice
- 1 small can sardines
Softened unsalted butter put in the bowl and mix it until smooth. Now add yolk only and 1 tablespoon of olive oil. Still mixing, gradually keep mixing and add remaining 3 yolks and 3 table spoons of olive oil.
Then add around 6 sardines (boneless and cleaned sardines), that will depend on how intense you want your sardine butter to be.
Next add 1 table spoon of chopped capers. If you’ve purchased in salt only capers, not in salted brine then you may want to rinse extraneous salt.
Saying that you could use slightly salted butter (with sea salt for example) but the final outcome may become a bit too salty, thus I do recommend to use unsalted butter which gives you a bit more space in terms of adjusting the taste to your liking.
So coming back to capers please do chop them finely so they are going to be spreaded more evenly in the mix.
Finally add a little bit of lemon juice into the spread which will add a little bit of freshness. Pinch of black pepper to taste (optional next time you can add some corriander / cilantro for extra freshness).
And voilla! You’re made yourself wonderful spread for crusty home baked bread. I do recommend your lovely sardine butter to be served on crusty sourdough bread or any rustic bread. Enjoy!
